Bubblegum Cheesecake and the Historic Mary Rose Museum

Pinch Punch first of the Month. November is here already. It’s the month of comfort food as the nights draw in the weather worsens…… and we all look forward to the Christmas party season.

Great news in that we are very excited to announce we will be one of the recommended caterers at the New Mary Rose Museum in the Historic Dockyard, Portsmouth

The Mary Rose Trust is currently under-taking a £35 million heritage project to build an internationally-renowned museum. The ship, together with her collection of almost 19,000 artefacts, placed in context, will next be open to the public in early 2013 in a brand new boat-shaped museum.

We are hugely honoured to be given the opportunity to cater for corporate parties and weddings at this prestigious venue, watch this space for details of exciting menus we will be creating for the museum

Back at Vanilla HQ we have been extremely busy with a large corporate contract. The last 2 weeks we have been up and down the country producing amazing canapes for a corporate company launching a new product. Molecular gastronomy  is now our forte with the kitchen reminding me of a chemistry class. Lee and his team have produced some amazing canapes a few of which are detailed below:

Savoury poppy seed French style macarrons with smoked salmon & crème Fraiche

Mini kilner jar savoury trifles with horseradish custard, Yorkshire pudding sponge, rare roasted beef & demi glace pearls

Lime & cardamom chicken pops encased in chilli yoghurt

Micro ploughmans – cheddar mousse with red onion chutney, green apple crisp & oat cracker crumble served on contemporary spoons

Micro toad in the hole cupcakes with apple sauce frosting & roast crackling decorations

Mini terracotta plant pots containing crackling chocolate soil with hidden wasabi truffles

 Even though it’s autumn we still busy with weddings and this weekend good luck to Natalie and Paul, Lauren and James and Bethan and Mike. Venues include The Tithe barn in Petersfield and Winchester Guildhall.

Talking of the Guildhall there is still time to book your Christmas party at this wonderful venue, if you want some menu ideas or inspiration regarding party theming please do give me a call. We are offering free mulled wine to all our clients who book with us.

Trialing and testing of our new menus commences next week and I will be first in the kitchen sampling the new ideas that Lee and his team have created. We are pleased to announce that Matty Harris is now our Sous Chef, Matt has been with us all summer he brings heaps of banqueting experience to the team, he can knock up a wonderful banquet for over 900 with limited facilities, believe me I have seen it, his catch phrase is “luck is for amateurs”, in other words we don’t need luck we are professionals !

Back in the office Jane continues to keep us all in check coming up with great ideas ie how to rapidly chill wine when we need crafty glass after a long 18 hour day, now I know why we invested in a state of the are blast chiller, no not for the food of course, it’s to chill my wine ( don’t tell Lee!)

The vanilla bars continue to be booked out. Did you know if you book Vanilla for your catering we will supply a free mobile pay bar for your party. We currently have three bars available to hire, the black rustic bar, the blue fluorescent and our new red bar. Our bars are fully equipped with all the latest beers wines and spirits including toffee vodkas (for all you skiers out there,) flavoured Sambuca’s and of course Jaeger. We do of course stock normal items including Hampshire real ales such as Double Drop and Bowman’s Swift One

Don’t forget If you book with us you are helping our Charity for 2012/3. facing the world ( Every wedding or party you book with us for a three course sit down we will donate 20p to our charity.
