RSM Tenon Award for Customer Service

Great news today we have found out we have been shortlisted for the South Coast Business 2013 in the following category: RSM Tenon Award for Customer Service. So excited to make the final four, fingers crossed we take the Title which will be announced in July.

We blinked and missed it but the bank holiday weather was kind to us which was a relief as we had 6 marquee weddings. No problem’s  with access and getting stuck in the mud as the sun shone throughout, although we did have problems at Highclere getting out, not what you need at 1,00am and poor Normans daffs became a casualty, but his daughters wedding was a triumph. The sushi was particularly fine, a great lastminute addition by Tim and Jess which we will definitely add to our general repertoire

Last weekend my talented team produced over 2000 canapés, all hand made using local Hampshire produce. They made fresh sushi which looked and tasted fantastic. They created over 700 deserts, baked over 1000 bread rolls using local flour. I list a few of my favourite dishes from the weekend below.

With over 700 covers catered for it aslo meant we raised over £140 in one weekend alone for our charity of 2013 the wedding wishing well Foundation.

 Starters

Smoked Ham Hock Bouldin Rolled in Cream Cheese & Chives with a Pineapple Chutney

Coriander Seed Crusted Tuna Loin, Mango & Red Pepper Salsa with Sweet Soy Syrup

Main Course

Pan Fried beef Fillet, Oxtail Tortellini, Madeira jus, Celeriac Puree and Glazed carrots

Guinea Fowl Stuffed with Cepes Mousseline with Bramley Apple Mash a cabbage and bacon soya bean and honey roasted baby beetroot

Savoury Gateau of Green Olive & Smoked Garlic Polenta with Roasted Red Peppers, Courgettes & Provolone, Baby Aubergines, Fennel & Ricotta Cream

Rack of Hampshire Pork with Sweet Potato mash , Brasied cabbage and a Dijon Mustard Sauce 

Sea bass Fillet & Isle of Wight Crab with a Roasted Tomato, Sweet Pepper & Herb Vierge

Desserts

Nougat Parfait with Seasonal Berries Candied Orange Zest

Sticky Toffee Pudding with Clotted Cream Ice Cream & Salted Caramel Snaps £5.75 ( the caramel snaps were on top like a hat !)

We have already had a lovely thank you from Helen, Sophie’s Mum, Sophie and Tim got married at Duncton Mill and here is what she had to say:

WOW !! what a day we had on Saturday,it was amazing, congratulations on your team of staff, I have had nothing but complements by so many guest

(the phone has not stopped ringing) on the service that they provided, they were so attentive nobody wanted for anything, thank them all for me.

A big thank you to Lee, the quality of food he served was outstanding, every course was presented with so much detail from the starter right down to the dessert. I think the choice of menu was perfect for the day.

As one guest quoted" This quality of food is what you would get in a 5 star Restaurant it is absolutely delicious"

Sophie and I want to personally thank Emily, she co-ordinated the whole wedding from start to finish to such a high standard, it ran so smoothly enabling both Sophie and I to relax and enjoy the day.

In all Vanilla delivered a first class Wedding Reception for Sophie and Tim an occasion they will never forget.

Our bars were in full swing with cocktail been mixed, Hampshire ales been poured, Bowmans and Flacks Manor are our local suppliers. We have also teamed up with Danebury vineyard in Stockbridge and we are supplying their wines as part of our drinks packages, They had a great article in Decanter magazine about their sparkling wine this month.

This month we are very excited to be catering as HMS Victory and at the opening of the new Mary Rose Museum, it is a great privilege to be asked to cater at these venues so watch this space for pictures.

Back at Vanilla HQ, our Bradley smokers been smoking and the guys are in the zone with our busy season now full on, we have said goodbye to our families/friends  our free time and we are on a roll, next breathing space in November…maybe !
