2000 canapes on one fine day !

Summer has finally arrived and it was a glorious weekend for the four weddings we catered for.

Once again we were at the Tithe with three weddings in a row, Nina and Gary, Nick and Laura and Emma and Gavin all chose this spectacular venue. Anna and Jenn, had their reception in a marquee in deepest Hampshire.

Over the weekend we made over 2000 fresh canapes for our weddings, stuffed 170 chicken breasts, made 400 fantastic bespoke desserts, and baked 800 fresh bread rolls (made with Bursledon windmill organic flour)

As always every wedding was different, Jenn and Katherine had a fantastic array of canapes on the lawn with wonderful views of the rolling Hampshire countryside.

As the  happy couple reside in Hong Kong, we produced an array of seafood canapes.

The main course was duck breast with orange and star anise. A wonderful sauterne washed down the dark chocolate mousse with orange crème brulee and  almond crumble

As an aside did you know ?

Sauternes is a French dessert wine from the Sauternais region of the Graves section in Bordeaux. Sauternes is made from Sémillon, Sauvignon Blanc, and Muscadelle grapes that have been affected by Botrytis cinerea, also known as noble rot. This causes the grapes to become partially raisined, resulting in concentrated and distinctively flavored wines. Sauternes is one of the few wine regions where infection with noble rot is a frequent occurrence, due to its climate. Even so, production is a hit-or-miss proposition, with widely varying harvests from vintage to vintage.

Sauternes are characterized by the balance of sweetness with the zest of acidity. Some common flavor notes include apricots, honey and peaches. The finish can resonate on the palate for several minutes. Sauternes are some of longest-lived wines, with premium examples from exceptional vintages properly kept having the potential to age well even beyond 100 years. Sauternes typically starts out with a golden, yellow color that becomes progressively darker as it ages. Some wine experts, believe that only once the wine reaches the color of an old copper coin has it started to develop its more complex and mature flavors.

So there you have it !, anyway it seemed to go down well with the guests on Saturday.

This weekend coming we are very busy again. Kate and Kevin and Kate and Phil are having their receptions in a marquee, David and Amy are at Winslowe house and Hamish and Ruth tie the knot at Farbridge barn, a truly wonderful venue.

We also have a corporate party on Saturday evening, so no rest for the Vanilla team this week

A huge thank you to you and your team for such a wonderful day on Saturday. The food was absolutely wonderful and the compliments were flying - but it wasn't just the food that was so great, it was all your help and support beforehand.  I fear that we were the clients from hell, and having both the bride and groom on the other side of the world was a logistical nightmare that you managed to minimise with enormous skill and tact. All the food was sensational but the duck in particular was a total triumph and so  many people were completely bowled over by being served such a perfectly pink treat.

I wanted to write to thank you and your team for making a major contribution to the great success of Tom and Jen’s wedding last Saturday.  I thought the food was excellent and the service was both efficient and unobtrusive.  I know how difficult it can be to cater for such numbers and to get hot food to everyone in a timely manner, which you did.  Tom and Jen both thought it was a beautiful and fantastic day, and as far as I could see all the guests enjoyed themselves tremendously.  So thank you to you and the team for making it such a memorable day.

I just had to write to say thank you for the magnificent food and service that you provided on Lindsey and Tim’s special day.  We were very impressed with the attention to detail and the very high quality of the food.  Everyone that we have spoken to is wondering how anyone can make beef that tender.  Your chef had left when I looked into the kitchen to thank him.  Could you please make sure that our thanks are passed on.  Your staff were very helpful and your calm and your professional personality made the day go without a hitch.  I don’t think your realise how important your talent for providing a calming influence on proceedings is.  You certainly filled me with confidence.  Kath and her team were brilliant at the end clearing up and helping us with everything that we needed.  We all had a fantastic day.  Thank you and your team once again.

Now that we have returned our life to normality after Anna & Tim’s wedding, I would like to say how much we appreciated your efforts to make the event both successful and smooth running.  We were pleased with all the catering arrangements and pleasant and helpful staff at the event.  The evening girls made it so easy for us to clear the remaining items and the kitchen left nicely clean.  The food itself was delicious and there were many comments about the lovely tasty canapés.  Thank you for all you did for us, particular thanks to Sally, and Helen on the day, for dealing with everything so efficiently and swiftly

Its nearly July , Hampshire fare, which we are proud to be  a member  of are celebrating their 10th anniversary. Make sure you pick up a programme copy to so you can see all the exciting events occurring in our wonderful county. 

Don’t forget that for every wedding we cater for, we donate 20p per head to our nominated charity Frank Water (  So the more guests you invite to your wedding the more money we donate.
