The Challenge

Joanna and Chris work as diving instructors on the beautiful island of Bali. The challenge then was to organise a wedding in Hampshire, eight time zones and 12,500 miles away from the bride and groom. Every year some of our couples organise their weddings from abroad, and this experience has taught us that this is not a stumbling block to a successful wedding day. Johanna’s Mum became very involved in planning the wedding, even standing in for the couple to taste the food beforehand and communicating with the couple what would work for them and what wouldn’t. Photos and site plans were emailed back and forth until everything was settled and they knew exactly what they were getting and how it was to be presented.

On the Day

This wedding was held in a marquee in the grounds of a private school that Joanna had actually attended as a child. At Vanilla we love the challenge of marquee weddings as they are all different. We have catered for marquee weddings in the snow, torrential rain, and howling winds, but luckily on the day of Johanna and Chris wedding it was a beautiful hot summer’s day. Everything went perfectly and even the family horse and dog attended, though thankfully we did not have to cater for them!

Main Course

1. Honey & Thyme Duck Breast with Wilted Churd, Rosemary Parmentier & Port Wine Reduction. 2. Savoury Gateau of Green Olive & Smoked Garlic Polenta with Roasted Red Peppers, Courgettes & Provolone, Baby Aubergines, Fennel & Ricotta Cream.

Dessert

Lemon & Poppy Seed Parfait with Rasberry Daiquiri Jelly, Dried Raspberry & Tonka Bean Tuille
